I've started hikes in the middle of the night to do this. The best chance of a clear sky and good view is if you are at the summit before 10 or 11. Even in the dry season it often clouds over in the afternoon. With any day hikes that you do, plan on an early start. Missing a local flight at the start is one thing, missing an international flight at the end is another. I would use caution putting your Flores trip at the end if you plan on flying home from Guatemala City unless you have a time buffer between the two flights.
